🧾 Ingredients

Base:

  • 1 cup uncooked grains (quinoa, brown rice, or farro)
  • 2 cups water or broth
  • Pinch of salt

Toppings:

  • 2 eggs
  • 1 cup mushrooms (sliced)
  • 2 cups fresh spinach
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt & black pepper

Optional extras (highly recommended):

  • Chili flakes
  • Sesame seeds or everything bagel seasoning
  • Drizzle of soy sauce or tamari

👩‍🍳 Instructions

1. Cook the grains

  • Rinse grains.
  • Add to a pot with water/broth and salt.
  • Bring to a boil, then simmer:
    • Quinoa: ~15 minutes
    • Brown rice: ~35–40 minutes
  • Fluff and set aside.

2. Sauté mushrooms & spinach
